This CSA option is appropriate for beginning herbalist and community-based learners. Over the course of the year we’ll meet 36 new herbs and get to know them through taste, touch and smell. Through a monthly, hour-long exploration we’ll come to know these herbs and their uses as food and herbal health support. You’ll learn basic skills like how to clean, prepare, dry and store your herbs at home. In class we’ll experiment with different applications covering vinegar infusions, fermentation, salves and infused oils, medicinal teas, herbals dips and marinades, tinctures, bitters, oxymel and ciders. The herbs we will meet in this CSA are nutritive, gentle and safe. Each month will include handouts for each herb as well as resources, recipes and study suggestions. When possible, we will visit wild herbs (like Jewelweed and Cleavers) in their habitat.
