Events: Focus For Summer Solstice – Cooling The Nerves

Midsummer. Gathering Day. Litha. Around here, we call it Summer Solstice. This year, the longest day falls on June 21st. Crops are thriving and herbs are at their peak for gathering. We find any excuse we can to be outdoors. Fire manifests itself into our lives literally through the sun and physically in the adventures and activities we engage in. To avoid burning ourselves out, we can utilize nature’s abundance to create calm and cool within the heat of summer. Seasonal harvests include: Linden Flower, Motherwort, Mugwort, Peach Leaf, Violet Leaf and Elderflower. Below is a recipe for a cooling herbal soda. Peach leaves give us a little taste of the fruits to come soon enough!

Cold Brew Peach and Elderflower Soda

  • 1 gallon spring water
  • 1 gallon bag peach leaf
  • 4-5 elderflower clusters
  • 1 1/2 cup sugar
  • 1/5 package champagne yeast

Put all ingredients in large glass or ceramic jar with a wide mouth. Stir as frequently as possible but at least 4 times a day for 24 hours. If the mixture bubbles well after 24 hours strain into swingtop bottle or plastic bottle and let carbonate. We suggested plastic for newbies!
